Chicken Broccoli Casserole

Hello to all!

Is it hard to feed your entire family?  I can’t tell you how annoying it is to cook a meal, only to find out that one of your kids will not eat it!  Frustrating?  Oh yeah!
At any rate… here is post number one of an easy dinner option that my entire family will eat happily and it is easy to boot!

Chicken Broccoli Casserole

1.5 to 2 pounds boneless chicken cut into bite-size chunks
1 can of cream of chicken soup
1/2 cup sour cream
10 dashes Worcestershire sauce
1/4 cup cooking sherry
salt and pepper to taste
1 large can of French Fried Onions
1 bag of frozen broccoli

Preheat oven to 350 deg.  Butter a 13×9 casserole dish
Lay the chicken evenly in the bottom of the buttered dish and
cover the entire surface with the frozen broccoli.
Mix the rest of the ingredients (minus the onions) in a mixing bowl. If it is too stiff you can add a little
milk to make it easier to pour (not too much!). Pour the mixture over the chicken and broccoli evenly so
it covers them both. Sprinkle the can of French Fried onions over the top of the casserole and cover with foil.

Bake at 350 deg for 55 minutes, remove the foil and bake for 15 more.

I usually serve this over wide egg noodles, but it would be good over rice or even mashed potatoes!

Note: If you are not feeding six, make the casserole in 2 8×8 casseroles and freeze one before cooking.
Cover it with plastic wrap and then foil. You can bake it right out of the freezer (don’t forget to remove the plastic)
just leave it in for 10 minutes longer with the foil on!
