Hard working man Cajun Shrimp Po Boys

As I sat and watched my husband and son toiling outside building a pavilion for the patio, I thought: “Those boys are gonna need an awesome lunch!” After several moments of thought I came up with a shrimp Po Boy sandwich.
I sauteed some shrimp, threw a sauce together and piled it up on some crusty bread. I think they felt pampered, I know they sure deserved the extra effort! I think this would male a great summer dinner. It is super easy, won’t heat up the kitchen, and it should be a big hit with the guys!

Shrimp Po Boy Sandwiches

For the shrimp

1 pound of shelled shrimp
3 T Cajun seasoning
black pepper and salt
1 T olive oil
2 T butter
1 tsp Worcestershire sauce
1 clove of garlic, crushed
2 tsp hot sauce
1/2 lemon, juiced

Rinse and dry the shrimp. sprinkle with the Cajun seasoning, salt and pepper. Saute the shrimp in a hot pan with the oil. Turn when they are pink and cook both sides just until done. (this takes just a moment). Turn off the heat, add the rest of the ingredients to the pan and stir the shrimp up in the sauce until they are all coated.

For the spicy mayo

3/4 cup good mayo
1/2 lemon, juiced
2 green onions, chopped
1 T hot sauce
! T chili sauce
black pepper and salt to taste

Mix all the ingredients together and chill until you make the sandwiches

For the sandwich

4 crusty rolls, baguettes or ciabatta
shredded lettuce
sliced tomatoes

Toast the rolls, slather both sides with the mayo. Lay on 1/4 of the shrimp, sliced tomatoes and the lettuce and cover with the other half of the bun. Serve.
